
WHITE TEA
White tea is a beverage made from the buds and very young leaves of a rare tea plant. It is grown exclusively in China. The most expensive varieties of white tea are considered to be those without leaves.
The most famous variety of white tea is Bai Hao Yin Zhen, which translates to "silver needles with white hairs." The drink got its name due to the short white hairs covering the buds.
Tea leaf harvesting starts during the Qingming period, on the 15th day after the spring equinox. It can be harvested three times a year, but the spring harvest is always valued more than the others. The first harvest is the collection of only the buds from the plant, for "Silver Needle" tea. Then comes the time for "White Peony," where the buds and the first leaves are collected. The harvested leaves are dried in the open air on special bamboo trays for one and a half days.
After this, the leaves undergo final drying with hot air and are then sent for packaging. The main task of the planters at this stage is not to damage the leaves and to preserve their natural shape as much as possible.
The leaves of the tea plant that end up in our cup do not undergo any thermal processing other than drying, which helps preserve the beneficial properties of white tea.
The drink is often called the elixir of immortality.
Moreover, due to its low degree of fermentation, white tea is the only tea that can be consumed at night.
Scientists have proven that regular consumption of white tea helps reduce and overcome depressive states. This type of tea drinking is especially relevant in winter when the body is weakened by viruses and a lack of sunlight. The boost to the immune system and the positive effect on the nervous system contribute to good health during the cold season.
