Sencha was invented in 1768 by Nagatani Soen in the Ujitahara region of Kyoto Prefecture — a tea master who revolutionised the way Japan processed its leaves, introducing steaming where others had used fire. His method preserved the vivid green colour of the leaf and unlocked a flavour the world had never tasted before. What began as a craft innovation became Japan's most beloved daily ritual — and sencha today accounts for the majority of all tea consumed in the country.

 

Our Shore Sencha carries that same spirit forward. Fukujyu Sencha is considered one of the better exported sencha teas, harvested from only the first and second flush — the tenderest, most expressive leaves of the season, picked at the precise moment when the plant has the most to say.

The dry leaf is a deep, vivid green — neat, fine needles with a fresh grassy aroma that opens the moment you unseal the bag. Once steeped, the liquor pours a clear, luminous jade. The flavour is where this tea earns its name: bright and sweet at the front, with a gentle grassiness and a soft, lingering oceanic finish — think sea air, a whisper of nori, the clean coolness of the coast.  How to Brew

Classic Method (teapot or mug): Use 1–1.5 tsp of loose leaf per 200 ml (8 oz) of water. This is important — heat your water to 80°C (175°F) and no hotter. Boiling water is the single most common mistake with Japanese green tea: it scorches the delicate leaf and turns sweetness into bitterness. Steep for 1.5–2 minutes. A second infusion is well worth it — slightly shorter, just as rewarding.

Cold Brew: Add 8–10 g of Shore Sencha to 750 ml of cold water and steep in the refrigerator for 4–6 hours. The cold brew draws out the sweetness beautifully while keeping any astringency completely at bay. Serve over ice — one of the finest iced teas you will ever make at home.

Iced Sencha (quick method): Brew a double-strength hot cup, then pour immediately over a full glass of ice. The rapid chill locks in the flavour and gives you a bright, vibrant cup in minutes.

 Storage

Store Shore Sencha in an airtight container, away from heat, light, and strong odours. Japanese green tea is more delicate than most — it absorbs surrounding aromas quickly and loses its freshness when exposed to air. A cool, dark cupboard is ideal.
